Grandmother Knew Best

 


Science validates what our grandmothers knew. Rich homemade chicken broths help cure colds. Stock contains minerals in a form the body can absorb easily—not just calcium but also magnesium, phosphorus, silicon, sulphur and trace minerals. It contains the broken down material from cartilage and tendons--stuff like chondroitin sulphates and glucosamine, now sold as expensive supplements for arthritis and joint pain.

Here's how we store our broths:



Some are put into ice cube trays for those times when just a little broth will do.  They are then popped out and stored in zipper freezer bags in the freezer.


The majority of our broths are put into zipper freezer bags and frozen.  We put 2 cups per bag.  If you want your broth to stack, freeze them individually, flat on a baking sheet.  It's best to put a paper towel between them when storing in the freezer so they don't stick together. 


We fold the zipper bag over and freeze them that way on baking trays. 


They are then stored in the door of our freezer.


ALWAYS place your bag of frozen broth in a container to thaw as sometimes the bags leak when thawing.

Scented Dryer Sheets

According to a CBS report, a study - published in the August 2011 issue of Air Quality, Atmosphere and Health - researchers enlisted two homeowners to volunteer their washers and dryers, which the team scrubbed clean beforehand. The researchers ran a regular laundry cycle for three scenarios in each home: once without any detergent, once with a scented liquid laundry detergent, and the last with both scented detergent and a leading brand of scented dryer sheets.

Their analysis found more than 25 "volatile" air pollutants - including the carcinogens acetaldehyde and benzene.

Benzene causes leukemia and other blood cancers, according to the American Cancer Society. Acetaldehyde has been shown to cause nasal and throat cancer in animal studies.

Caramel Chocolate Fudge



This has got to be the easiest fudge I've ever made. Works every time! I got this recipe from a friend, I don't know where she got it.

Before you start, line your pan with a sheet of foil and spray it with cooking spray.

**Caramel Fudge Layer
2 cup packed brown sugar
1/4 cup butter (do not use margarine)
3/4 Cup evaporated milk (1/2 of 12-oz can)
2 cup miniature marshmallows
1 - 12 oz pkg white vanilla chocolate baking chips
1 teaspoon vanilla
1 cup chopped walnuts (opt)

** Chocolate Fudge layer
2 cups granulated sugar
1/4 Cup butter, (do not use margarine)
3/4 cup evaporated milk (remaining 1/2 of 12 oz can)
2 cups miniature marshmallows
1 - 12-oz pkg semisweet chocolate chips
1 tsp vanilla
1 1/2 cups walnut halves or pieces (opt)

CARAMEL FUDGE LAYER - In a heavy 3-quart saucepan cook brown sugar, butter and milk over medium-high heat, stirring constantly, until sugar is dissolved. Heat to boiling, stirring constantly. Reduce heat to low; boil gently without stirring 5 minutes. Remove saucepan from heat. Stir in 2 cups marshmallows, the vanilla chips and vanilla; stir until marshmallows and chips are melted and mixture is smooth. Stir in chopped walnuts if you are using them. Quickly spread mixture in pan. Refrigerate 30 minutes before preparing Chocolate Fudge layer.

CHOCOLATE FUDGE LAYER - In a heavy 3-quart saucepan cook sugar, butter and milk over medium-high heat, stirring constantly, until sugar is dissolved. Heat to boiling, stirring constantly. Reduce heat to low; boil gently without stirring 5 minutes. Remove saucepan from heat. Stir in 2 cups marshmallows, the chocolate chips and vanilla; stir until marshmallows and chips are melted and mixture is smooth. Quickly spread mixture over top of caramel fudge layer in pan. Cover and refrigerate 1 hour and 30 minutes.

Remove fudge from pan by lifting foil; remove foil from sides of fudge. With long knife, cut fudge into rows and then cubes. Store in tightly covered container in refrigerator.

January's Top Post of the Month

Being a relatively new site I thought I'd share every month what the previous month's favorite posts were, so here goes.

The all time favorite post for January was my review for the book GLUTEN-FREE, SUGAR FREE COOKING, proving that you, my readers, are very interested in making good choices in the foods you eat.  I'll be looking for other products to review for you in the future.



The next favorite was the post on TEA FOR YOU~  I'm glad it was a favorite of your's because I love, love, love tea and everything connected to tea.  I also hope you'll be ordering some of my tea blends for your next tea party!

Number three on the top five posts for January was the JELLY AND JAM LORE story from the jelly and jam preservation association.  Our list of Jelly and Jam flavors are going to grow dramatically this next season so watch for new and wonderful flavors.
